Your English-German translation model uses a 50,000-word vocabulary on each side, and any word outside it becomes UNK. Names, rare inflections and German compounds hit UNK constantly.
A back-off dictionary that copies or looks up UNK words fixes some names and misses new compounds and inflected forms.
